Wheat types

Two classes of wheat are grown in the state—hard red winter wheat and hard white wheat. Currently the hard red varieties are dominant with Jagalene, Pronghorn, and Millenium being the most popular in 2008.

Pie ChartHard red winter wheat is very versatile with excellent milling and baking characteristics for pan breads. It is also excellent for Asian noodles, hard rolls, and flat breads. This type of wheat is also commonly used as an improver for blending.

Hard white wheat is also well-suited for western Nebraska and is beginning to grow in popularity. It has excellent potential to be a great success in Nebraska. This type of wheat is becoming more popular as consumer demand for whole grains increases. While providing all of the nutritional value and health benefits of whole grains, hard white wheat offers the look, texture, and taste of refined flour.
